The inspiration was SUZE, the French liqueur made with gentian. In Japan, when it comes to root vegetables, burdock seemed like the obvious choice. We carefully washed organic burdock roots from Hokkaido, removing every trace of soil, then finely chopped and distilled them into a spirit. Blended with the burdock is a spirit distilled from dandelion roots harvested in spring, along with ginger. To add depth, we used a brandy made from tails—the final portion of a distillation, the part left at the very end after distilling fruit. It is, in a sense, the “root” of the fruit distillation. A touch of autumn honey harvested at mitosaya brings a gentle sweetness and balances the flavor, while spring and autumn turmeric add a vivid yellow hue.\u003c\/p\u003e\n\u003cp\u003eA spirit made from a LOOT of ROOTS—a gathering of roots that have found their way to us from many different places.\u003c\/p\u003e\n\u003cp\u003eThings we have encountered in one form or another are transformed through distillation, an act of extracting their essence, into an elegant and refined aroma.
