Guided by the philosophy \"add nothing, take nothing away,\" they make honey by bottling it just as it comes from the hive. Together, we've set up 10 hives in a cool spot on mitosaya's mountainside, and taken on beekeeping and honey harvesting — dressing ourselves in unfamiliar protective suits to lend a hand with the harvest.\u003c\/p\u003e\n\u003cp\u003eAs the seasons turn, all kinds of plants come into bloom across mitosaya, and the bees are out in force — you can hear their hum and catch sight of them almost everywhere on the property.\u003c\/p\u003e\n\u003cp\u003eWe harvest twice a year, and both are what's known as polyfloral honey: a bright, fresh honey gathered in early summer, and a smooth, vibrant honey gathered at the height of summer.\u003c\/p\u003e\n\u003cp\u003eThe Early Summer honey is drawn from the moment when the plants across the property bloom all at once, giving it a floral character that includes citrus blossom nectar. Pale in color with a light, refreshing taste, it's honey exactly as nature made it.\u003c\/p\u003e\n\u003cp\u003eThe Mid Summer batch was harvested on August 20th, just before the arrival of autumn — right before the point in the season when the spicy nectar of sansho pepper blossoms usually begins to come in. Gathered at this particular moment, it carries a touch more moisture, giving it a fresh, dewy quality.
