Around one ton of figs arrives in several batches, each at the peak of sweetness and aroma. Fully ripe and soft enough to crush easily by hand, the figs carry a delicate moisture on their skins, and vigorous fermentation begins almost immediately.\u003c\/p\u003e\n\u003cp\u003eTheir fresh, juicy aroma gradually transforms into something sweeter, deeper, and richer, with the warmth of alcohol. Once fully fermented, the figs are distilled in several batches.\u003c\/p\u003e\n\u003cp\u003eFor maturation, we use the old oak barrels we return to year after year, allowing the spirit to rest slowly for around a year. The distinctive green character of the figs blends with the flavors imparted by the oak, revealing a softer, more rounded expression.\u003c\/p\u003e\n\u003cp\u003eFor dilution, we use distilled water made by first fermenting fig leaves into a tea, cold-infusing them in water, and then distilling the infusion. Clear, fresh leaf notes resonate with the elegant aroma of ripe figs, creating an eau-de-vie that expresses the fruit in its entirety, leaving nothing behind\u003c\/p\u003e\n\u003cp\u003eFor the full-size bottle, we also offer a version with freshly harvested figs from this year resting inside the bottle.
