It is generally recommended that harvested olives be pressed within 24 hours—and ideally within 8 hours—to prevent oxidation and fermentation from setting in. However, Mr. Yamamoto of the Katsushige Yamamoto Olive Farm presses his olives within just 4 hours of harvest, capturing their vivid aroma.\u003c\/p\u003e\n\u003cp\u003eWhat arrived at mitosaya were the olive fruits left over after pressing. The moment you open the sealed bag, the fresh, green, and juicy aroma trapped inside the fruit bursts forth all at once. To capture this aroma, the fruits are slowly macerated in low-proof rice spirits and then distilled. The resulting spirit is colorless, transparent, and dry.
